MASAYA: Cheerful Filipino Boodle Fight Event

Tacoma, WA, June 26th, 2018- The New York Times recently released a piece explaining how Filipino food has made its way into the American mainstream. Chef Jan Z. Parker will continue to spread this culinary word in the South Sound with her second pop-up in Tacoma. She feels extremely connected to this event since she lives in Tacoma and hopes to build a Pop-Up relationship with local restaurants and cafes. Her main focus is Boodle Fight. Boodle Fight is a military tradition in the Philippines where all ranks join at the table and eat on banana leaves with their hands. This act signifies camaraderie and unity. Chef Jan’s goal is to present her Filipino Heritage and incorporate techniques she learned while living in Europe, yet maintaining traditional flavors of the Philippines. Her experience includes working at the Four Seasons Hotel in Seattle, creating the culinary curriculum for the USO Germany, and staging at The Modernist Cuisine & Il Corvo.
